Lemon cream pie and chia pudding
Ingredients
1 Lemon zest
2 Tbsp lemon juice
4 Tbsp maple syrup
1/2 TSP lemon extract
1/4 Tsp sea salt
1/4 Tsp turmeric
1/4 Tsp vanilla extract
1 cup raw cashews
1/4 cup of chia seeds
1 1/2 cup of oat milk
Instructions
Pour your chia seeds into a jug
Add in your milk and the zest of a lemon and give it a mix
Cut the same lemon in half and zest both halves, and add the lemon juice to the mixture
Then add the turmeric in to add some color to the mixture and whisk well
Next add the syrup of your juice to sweeten it up
Whisk again and leave to set overnight in the fridge
Optional - this can be topped with frozen/ fresh fruit, nuts and seeds of your choice
