A tasty and healthy treat that can be made easily as a light snack or small desert, so why not make with your children or bring to a dinner party to add to the spread.


Dates are rich in vitamins and minerals, including potassium, magnesium, vitamin B6, and fiber. These nutrients play a crucial role in supporting brain health and mood regulation. Pumpkin seeds supply the brain with zinc, which is an essential brain booster mineral and improves thinking skills.


Date Energy Balls

20-25 mins Makes about 12-14 bites Easy


Ingredients

  • 10-12 medjool dates

  • 2 cups nuts - walnuts, pistachio, almonds

  • 1-3 tbsp seeds - pumpkin, sunflower, flaxseed

  • Pinch salt

  • 1/4 desiccated coconut







Instructions

  1. Pit the medjool dates and soak them in warm water for 10 minutes until they soften

  2. Place the pitted dates other ingredients in the bowl of a large processor

  3. Blend on a high until a thick "dough" is formed and the mixture feels sticky

  4. Scoop about 1-2 tbsp of the mixture and use your hands to roll it in a ball

  5. If you have time then let them sit in the fridge for 5 minutes

  6. Roll the energy bites into the desiccated or shredded coconut pressing gently so they adhere.

  7. Eat and enjoy!!
