Zucchini Noodles with Avocado and Lime dressing

A Fresh, citrus, vibrant and eye-catching salad, quick and easy to make


Zucchini is low in calories, with no fat and high in fiber full of vitamin A and vitamin C, helping to boost your immune system and help with your vision too

This is a quick and easy salad to make with a bit of a twist. Full of color nutrients and flavor. A way to make salad more appealing, to the not so salad lovers, and a fun way for the salad lovers to re-fall in love with salad all over again

Zucchini Noodles with Avocado

and Lime dressing


20 mins Serves 5 easy - child friendly

Ingredients

1 x Zucchini

1 x Swiss chart

1 x Wild rocket leaves

1 x cup of broccoli Florets

7 Vine tomatoes

3 Seaweed/ Nori Sheets


Dressing

1/2 Avocado

2 Tsp Lime Juice

Salt & Cayanne Pepper



Instructions

  1. To start off you want to make sure you've washed your hands, and have got a clean surface ready to chop up your salad

  2. Next, you need to thoroughly wash all of your ingredients

  3. After that, get to chopping all of your ingredients, apart from the Zucchini, (you can chop the veg as small or as big as you want it, it's all up to preference

  4. Now the fun part, to make the zucchini noodles, you are going to get your spiralizer, this can a hand one or a table one, and put your zucchini in and get spiraling (make sure to have a bowl underneath for the veg to go into

  5. Make sure to then mix all it together, showcasing all the vibrant colors and fresh salad

  6. To make the dressing m ash the Avocado and add the lime juice, then season with salt and cayenne pepper as desired


Presentation

  1. If you have any leaves, being lettuce leaves or more wild rocket leaves wash, pat dry and lay them at the bottom of your serving bowl

  2. optional, you can then add the dressing to the mixed salad and mix it again before laying on top of the leaves, or place your salad down first and pour your dressing on top

  3. optional you can garnish with some seeds if you would like and yeast flakes getting that extra B12



 

These are some examples of the spiralizer if you don't have one you can also use a grater or peeler and make flat noodles.





The third one you probably already have in your house, and if not, it can be bought from any store



This salad can also be done, by using a butternut squash instead of zucchini noodles too.
