Quick Quinoa Salad - Gluten-Free

A quick and easy vibrant salad perfect for a hot summers day, or nice side dish to a bring a meal together!


Quinoa is gluten-free and packed with nutrients like protein, zinc, fiber, and folate, as well as antioxidants.







Quick Quinoa Salad


25-30 mins Serves 4-10 Easy


Ingredients


Tri color quinoa

Peppers half of yellow and half of red

Handful of spinach

3 Spring onions

Few sprigs of coriander

1/2 Cucumber

1/2 Red/ green jalapeño

One floret of broccoli

2 Radishes

1/2 carrot grated

2 Celery sticks

1/2 red onion






Instructions

  1. Cook your quinoa for about 10-15 mins, and use a folk to mix with if you want it fluffy

  2. Then wash and chop you veg and salad once the quinoa is cooked, and leave to cool

  3. Once the quinoa is cooled down add all your veg together in a bowl

  4. Mix all your ingredients together thoroughly

  5. Optional - You can also add some herbs and seasonings such as mixed herbs, yeast flakes and herbamare if you would like a bit more flavour

  6. Add you choice of dressing and mix once again

  7. Finally eat and be merry, and then let us know how you get on and share this recipe with others


Optional - Salad dressing sauce

Garlic

Ape cider vinegar

Olive oil

Lemon juice

Mixed herbs

Salt

Smoked paprika

Cayenne pepper

Blend all ingredients, stir with a spoon adjust to taste and use as you wish ;)
