Cheesy Broccoli & Tofu Quiche with winter green salad.

Broccoli is high in many nutrients, including fiber vitamin c, vitamin k, iron and potassium. It also boasts more protein than most other vegetables.

This is a tasty meal perfect for a summers day, allowing you to enjoy such a delicious dish in a healthy, plant based way. This recipe was made on the TTI family health show by Alvin and Louise Mcqueen.


Cheesy Broccoli & Tofu Quiche with winter green salad


1hr 30 mins 6-8 servings intermediate


Ingredients

1 pack tofu

1/2 cup yellow onion

2 cups broccoli

1/2 cup plain soya milk

1/2 cup yeast flakes

1 cup Vegan cheddar cheese

Pastry Crust

1/2 cup Coconut flour

1/2 cup Almond flour

4 Tsp of milled flaxseed

I/4 Tsp sea salt

1/4 cup coconut oil

1/3 cup of water

Winter Salad

1 cup of kale

1 Cucumber

1 Avocado




Instructions

  1. Firstly, make sure to start off by making the pastry

  2. Add all your dry ingredients into the bowl and mix together

  3. Then add in your coconut oil and mix, and then slowly add in your water until the flour has formed a dough consistency

  4. Create into a ball

  5. Next get your dough and press it down into the tin

  6. Place into the oven for around 5-10mins

  7. Now for the filling break up the tofu, into smaller bits into a large bowl and add in the yeast flakes

  8. Then chop up half the onion and pour into the bowl

  9. Add your milk to the mixture and then blend it using a hand mixer or blender while adding in some turmeric to add to the color and blend until smooth (similar consistency to scrambles eggs

  10. Chop up the broccoli and broccoli stems finely and then add them to the tofu and combine ingredients

  11. Add in your cheese and mix all ingredients

  12. Now its time to add those ingredients to the pastry previously cooked flatten/ smooth over the top and place in the oven for 30-40mins

  13. To make the winter salad, Put your kale in a pan with warm water and heat up until its warm, for approximately 1 mins

  14. Chop up your cucumber and avocado

  15. Add to the kale and top with seeds of your choice

  16. Optional - you can garnish with lemon

  17. Eat and enjoy
